Terrific Teen School Lunch – Tomato Bruschetta

Years and years of school lunches can become a bit of a drudgery, but every now and then I come up with something that tickles my girls tastebuds!
They do like to get their gourmet on, and a vegemite sandwich just does not cut it in our house.
This lunch is quick and easy to make, tastes great, and is good for them. Perfect!
TOMATO BRUSCHETTA
Ingredients:- (per person)

2 small tomatoes
- 1/4 of small red onion
- dash of olive oil
- salt and pepper
- a little fresh basil, oregano or parsley
Finely dice the tomatoes and onions and place in a small bowl.
Add the olive oil, salt and pepper and finely diced herbs.
Allow to sit for 10 minutes.
Spoon the mixture into a suitable, leak proof container, allowing the excess fluid to be left behind in the bowl.
Store in the fridge until required.
Serve with thin slices of crunchy french stick.
