Bacon, Zucchini and Basil Muffins

BACON, ZUCCHINI AND BASIL MINI MUFFINS

These super yummy little morsels are so easy to make and are a great way to get kids to eat zucchini, they won’t even know it’s in there! They are perfect for an afternoon tea, or pack into the kids school lunches!

 

 

BACON, ZUCCHINI AND BASIL MINI MUFFINS (Makes 24)

  • 300 gm Zucchini (grated)
  • 1 small Onion (finely diced)
  • 2 rashers Bacon (finely diced)
  • 1/2 cup grated Cheese
  • 1/8 cup Olive Oil
  • 1 cup Self Raising Flour (sifted)
  • 3 eggs (lightly beaten)
  • 1 teaspoon GOURMET GARDEN TUBE Parsley
  • 1 teaspoon GOURMET GARDEN TUBE Basil
  • Salt and Pepper to taste

Preheat oven to 190C.

Generously spray 2 patty pan trays with non-stick cooking spray, (If you don’t have patty pan trays, use any muffin trays, I have even doubled this recipe and made big texas muffin size ones).

Place all ingredients into a large mixing bowl and stir with a fork until combined.

Spoon into prepared patty pan trays.

 

Bake in the oven for 30 minutes until golden. Turning once after about 15 minutes.

Remove from patty pan trays with a fork, and cool on a wire rack. They freeze beautifully if wrapped in cling wrap and placed in a storage container, I love my Tupperware freezer mate containers as they really do stop freezer burn.

  1. What are the tubes? Is that a puree of the herb or is it a combination of things in there??? I put zucchini in lots of things….including risoles

      Gourmet Garden tubes are found in the fresh produce section of the supermarket and are fresh herbs in a tube ready to be added to your cooking. They last for ages in the fridge and taste so much better than dried herbs. Definately worth putting on your shopping list. Regards Nikki

      1. ugh, nuts are expensive! It is $20/lb for pnceas, and I love pnceas in my salads, etc. and it drives me nuts that it is so expensive, other nuts too!! why are healthy food so expensive?? maybe the general world population wouldn’t be overweight if the junk food was expensive while the healthy food was more affordable.Anyway, I totally pinned this recipe for future use. Next year ( i say that every year) I will have a garden of my own!

  2. Zucchini….it’s make me wish I had a garden, but the tghhout of one more thing to keep up with exhausts me! I remember the day my sister would make zucchini bread loved loved it. Maybe I should find a farmers market here in Houston to visit. Thanks for your blog!
