With a few simple ingredients, this refreshing ice cream is a lovely way to end a meal, especially if it was spicy!
You don’t need an ice cream machine either, as you cheat and use a good quality vanilla ice cream as the base. 🙂
I am not really the biggest ice cream fan, normally a sorbet would be more up my alley, but this was really delightful and made the perfect finish to a lovely luncheon a friend hosted at Christmas.
RECIPE
1 litre vanilla ice cream (slightly softened)
1 lime (rind finely diced and juiced)
2 tablespoons desiccated coconut
Combine all ingredients together and place in a cake tin, cover with aluminium foil and freeze for several hours or overnight. (Using metal containers will not get damaged in the freezer and as they get cold quickly the ice cream will harden fast and this reduces the build up of ice particles.)
It has a delicate and fresh flavour. Serve in a pretty bowl and use an melon baller rather than an ice cream scoop to serve.
A fresh mint leaf or two would make a lovely decoration on top and would enhance the refreshing taste of this icy treat. If you want to add a little crunch to your ice cream, a few mini meringues crushed up and mixed through is another easy addition.
