Honey Hassleback Roast Potatoes

When it’s cold outside, I love having the oven on and dinner baking away!

These yummy potatoes are a great alternative to plain roast potatoes and are really easy to make.

HONEY HASSLEBACK POTATOES

Ingredients – 1 potato per person, melted butter and honey.

Method – Spray a baking tray with non-stick spray.

Peel potatoes and cut in half, lengthwise.

Carefully cut thin slices across the potatoes, but not quite all the way through.

Place the potatoes flat side down on the baking tray.

Using a basting brush, cover each potato with melted butter and drizzle with honey.

Bake for 1 hour at 180C. Baste with the butter and honey once or twice during cooking.

Cook them for longer if you want the slices to get really crispy. (I had two starvatious children that would not wait for dinner any longer so mine did not go as dark and crunchy as I usually prefer them)!
