Wonderful One Pot Brownie


WW HQ houses a group of Brownie lovers, and with lot’s of different recipies for this treat in my folder, we did a little experiment on the weekend, using a bit of one recipe and a little of another and devised this super moist and delish Brownie that is quick and very easy to make!


  • 200 gm good quality Dark Chocolate, chopped (please do not use ‘homebrand’ for this)
  • 200 gm butter, chopped
  • 1/3 cup cocoa powder
  • 1 1/2 cups caster sugar
  • 3 eggs (at room temperature)
  • 3/4 cup of plain flower, sifted
  • 1/4 cup of self raising flour, sifted
  • 150 gm quality White Chocolate, chopped
  • 1 cup walnut pieces (I buy the pack that are already chopped up)

Preheat oven to 180C.

Spray a 17 x 26cm slab pan with non-stick spray and line with a sheet of baking paper.

Place a medium saucepan on low heat. Add the butter and when it has partially melted, add the dark chocolate and continue to stir until completely melted. Remove from heat and allow to cool for 5 minutes.

Add cocoa and sugar to warm chocolate mixture and stir until dissolved. Whisk in eggs one at a time.

Add flours and stir until combined.

Add white chocolate and walnuts and stir through.

Pour mixture into prepared pan and bake for 35 minutes. It has a lovely glossy crust all over when ready.

Cool completely in pan, then refridgerate. Lasts well for days (providing it does not get demolished before that).

Dust well with sifted icing sugar and cut into small squares.
