Quick and Easy Mexican Rice Roll-Ups!

I love quick and easy dinners for week nights, this one is fast, very tasty and so easy to do!

These roll-ups make it on to our dinner table regularly and are a favourite in this house. You can alter the ‘meat’ part to anything you have handy. I have used chicken schnitzel strips, mexican beef, but this week I used these cute little Southern Spice mini chicken balls that I found in Coles in the meat section.

INGREDIENTS

  • 6 Mexican Tortilla’s
  • 1 Packet Uncle Ben’s Express Mexican Style Brown Rice
  • 2 chicken schnitzels – cooked and cut into strips
  • 1 cup of grated cheese
  • Sour cream and Sweet Chilli Sauce (for serving)

Pre-heat the oven to 180C.

Place the tortilla’s flat on the kitchen bench.

Cut open the Uncle Ben’s rice and microwave on high for 45 seconds to warm it up a little.

Spoon the rice on to the torilla’s in a stripe down the centre (but not to close to the edge or it will fall out).

Top with the strips of chicken schnitzel.

Fold one edge into the centre, then fold the other edge up so that you have a wrap shape.

Turn upside down as you place on a baking tray so the edges are facing down.

Top with the grated cheese.

Bake for approximately 15 mins.

Top with sour cream and sweet chilli sauce if desired. Guacamole is also a yummy addition for colour and flavour.

    1. Schnitzel was what I used the first time, but I do get this fantastic mexican beef from Woolworths that is just so tender and works really well with these. 🙂

    1. Me too, the same old gets boring and I love finding new easy and yummy recipies, this one I made up myself by shear accident, and it is now a family favourite. 🙂
