Gnocchi And Bacon Bake – A Delicious And Tasty Dinner!

Gnocchi is a favourite dinner in our house. This recipe is quick and easy but tastes fabulous!

Yummy little puffs of potato ‘pasta’ that you can make yourself, but I just head to the pasta aisle in the supermarket and buy the ready made…..this dinner is meant to be quick. 🙂

INGREDIENTS

1 x 500gm packet of Gnocchi

1 x 700gm bottle of Pasta Sauce (use half and freeze the other half)

1 x 300ml bottle of Light Cream (use half and freeze the half)

1 small Onion (finely diced)

1/2 green Capsicum (finely diced)

4 rashers short cut Bacon (finely diced)

1 cup grated tasty Cheese.

DIRECTIONS

Turn on oven to 180C.

Bring a large saucepan, half filled with water and a dash of salt to boil.

Add the gnocchi and stir with a slotted metal spoon.

When the water returns to the boil and the gnocchi float to the top, remove from heat and drain in a colander.

Spray a oven safe baking dish with non-stick cooking spray.

Place the gnocchi into the baking dish, add the pasta sauce and stir to coat.

Sprinkle the diced onion, capsicum and bacon over the gnocchi.

Sprinkle the grated cheese over the gnocchi.

Bake for 15 minutes or until the cheese and toppings are golden brown.

(You can finish this off under the grill to speed things up, as long as the ingredients are all nice and warm first)
